Today, Christian Binner runs the estate in the eighth generation, with a clear focus on naturalness and terroir-driven winemaking. Chemical pesticides were already avoided in the 1970s. Today, the vineyards are fully certified organic (since 2004) and have also carried the Demeter seal since 2020. Vine care is largely done by hand, using horse-drawn plows and minimal machinery. The wines are spontaneously fermented, bottled unfined and unfiltered, and aged for an extended period on the lees – usually between 11 and 36 months – in old wooden barrels. The specially built bio-climate cellar provides optimal conditions for this. Old vines are preserved through massal selection to maintain genetic diversity and depth in the wine.
