Fabio's path to becoming a winemaker began as a passionate hobby alongside his work as a translator.
In the early 2000s, he farmed a small vineyard near Carabaña, about 50 kilometers from Madrid, in the Sierra de Gredos Regional Park. There he cultivated
The regional grape varieties Airén and Tempranillo are planted on one hectare of land. His first vintage was produced with simple means: a hand-dug hut on the hillside, some amphorae, a basket press and about 600 bottles of wine.
From the very beginning, Fabio emphasized natural and sustainable viticulture, both in the vineyard and in the cellar. For ten years, he worked autodidactically until he rented space in the winery of a former cooperative in El Tiemblo, where he still works today. In 2017, he lost his job as a translator because he was spending more and more time in the vineyard than in the office. This prompted him to dedicate himself entirely to winemaking.
Since then, each of his vintages has been a new surprise, be it white, red, or orange wine, with or without carbonation. Fabio allows plenty of room for experimentation and views natural wine not just as a product, but as an expression of an attitude.
