Vinification: Hand-picked, gentle whole-cluster pressing, slow low-temperature spontaneous fermentation, approximately 11 months on the fine lees in 100-year-old wooden foudres, without filtration, clarification, or added sulfur
Appearance: Crystal clear, pale straw yellow, slightly pearly
Nose: Floral meadow herbs, summer apple and quince, mineral-salty, delicate flint notes, subtle buttery nuance
Taste: Dry, lively and fresh, juicy and fruity (apple, pear, apricot), strong but fine acidity, salty-mineral notes, slightly spicy, overall harmonious and approachable
Body: Medium
Alcohol: 12.5% vol.
Overall impression: Lively and charming – ideal as an uncomplicated “lunch wine”, overall sonorous and approachable
